Anytime Shrimp Toss

Recipe Introduction
The best thing about this salad is it is easy, fresh, and low fat.
List of Ingredients
- 1 lb of salad greens, any variation
- 1 bunch of radishes
- 1 or 2 bunches green onion
- 1/2 lb of vine ripe tomatoes or 1 basket of cherry or grape tomatoes
- 1 large cucumber
- 1/2 lb. cleaned cooked bay shrimp
- 1 fresh lemon, lemon pepper, oregano, parsley, and garlic to taste
- 3 to 4 Tbsp. olive oil
- A few shakes of red wine vinegar to taste
Instructions
- Slice and dice all of the veggies and set aside.
- Rinse the shrimp in cold water, drain and pat dry.
- In a large salad or pasta bowl, add salad greens and 1/2 of oil.
- Toss well and add shrimp. Add juice from 1 lemon.
- Add spices and toss well again. Add diced veggies, except for tomatoes.
- Toss again with the rest of oil. Add the vinegar and tomatoes and again toss.
- Serve immediately.
