    4-6 lbs beef ribs
    1-2 carrots, peeled and sliced
    1-2 stalks celery, with leaves chopped
    6 black pepper corns

    Beer BBQ Sauce:
    2 tbsp oil
    1 medium onion, chopped
    2 cloves garlic, minced
    1 fresh hot chili pepper diced or 1/4 tsp tabasco
    12 oz bottle beer
    3/4 cup ketchup
    1/4 cup cider vinegar
    1/4 cup brown sugar
    2 tbsp worcestershire sauce
    1 tbsp chili power

    Recipe



    1. Combine ribs, carrots, celery and peppercorns in a large pot. Add water to cover and bring to a boil. Cover, reduce heat and simmer 20-30 minutes or until tender.

    2. Meanwhile, make sauce by sauteing onion,garlic and chili pepper in oil until onion is softened but not brown. Add remaining ingredients including tabasco. Bring to a boil, stirring often. Reduce heat and simmer, uncovered 20 minutes.

    3. Drain ribs. Pour sauce over ribs and marinate, covered in the fridge at least 4 hours.

    4.Preheat barbecue. Just before grilling, brush hot rack with oil. Grill over medium-hot bbq 5 minutes per side basting with reserved marinade or just until nicely browned.
