Super Spinach Salad

List of Ingredients
- 1/2 cup vegetable oil
- 1/2 onion, cut into 1-inch chunks ( I cut down to 2 tbsps)
- 1/4 cup firmly packed brown sugar
- 1/4 cup red wine vinegar
- 2 tablespoons catsup
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dry mustard
- 4 bacon slices
- 1 spinach bunch, washed, trimmed, torn into bite-size pieces
- 1 1/2 cups bean sprouts
- 6 mushrooms, sliced
- 4 green onions, sliced
- 1/2 cup sliced canned water chestnuts
- 2 hard-boiled eggs, chopped
- 1/4 cup dry-roasted sunflower seeds
Instructions
- Puree first 7 ingredients in blender or processor until smooth and emulsified. Set dressing aside.
- Cook bacon in heavy medium skillet over medium heat until crisp. Drain bacon on paper towels. Crumble.
- Combine spinach and remaining ingredients in large bowl. Add enough dressing to season to taste. Toss well.
- Garnish salad with bacon and serve.
Serves 4.
