Spinach with Mushrooms & Potato

List of Ingredients
1/2 small Onion, peeled & chopped
100g (4oz) Mushrooms, diced
1 tablespoon Oil
250g (9oz) Potatoes, peeled & diced
150mls (5fl oz) Vegetable Stock
100g (4oz) Fresh Spinach, washed or 50g (2oz) Frozen Spinach
Recipe
Saute the onion in the oil until it has softened, then add the mushrooms, sauteing them for a few minutes.
Add the potatoes & vegetable stock. Bring to the boil, cover & let simmer for 10 minutes.
Add the spinach & cook for a further 2 mins.
Mash or puree.
Makes approx 4 portions.
