Ginger Coconut Slice

List of Ingredients
60g Butter, chopped
1 tbspn Golden Syrup
1 cup (150g) S/R Flour
1.5 tspn Ground Ginger
1/2 cup (110g) Caster Sugar
1/2 cup (45g) Coconut
1 Egg, lightly beaten
Lemon Icing:
1.5 cups (240g) Icing Sugar
40g Soft Butter
1 tspn Grated Lemon Rind
1 tbspn Lemon Juice, approximatelyRecipe
Combine butter & golden syrup in a medium saucepan, stir over heat until butter melts; stand until warm.
Stir in sifted flour, ginger, sugar, coconut & egg.
Press mixture over the base of a greased 19cm x 29cm slice pan.
Bake in a moderate oven (180c) for approximately 25 - 30 minutes or until golden brown & firm. Cool in pan. Spread with lemon icing, leave to set.
Lemon Icing:
Sift icing sugar into a small heatproof bowl, stir in butter, rind & enough juice, to mix to a stiff paste. Stir over hot water until spreadable.
