    Delicious and easy. Can be cut into slices and frozen for quick lunchbox fillers.

    List of Ingredients




    1 Cup of Boiling Water
    250g Dates
    2 Tbspns Butter
    3/4 Cup Brown Sugar
    1/4 Cup White Sugar
    1 Large Egg
    2 1/4 Cups Plain Flour (can use wholemeal)
    1 Tbspn Baking Powder
    1/2 Tspn Salt
    1/2 Cup Walnuts, chopped

    Recipe



    Grease 9x5x3 inch loaf pan and preheat oven to 180C.

    Combine water, dates and brown sugar in a bowl and set aside.

    Beat the egg and white sugar until light.

    Combine dry ingredients in a large bowl and make a well in the centre. Combine the dates, egg mix, walnuts and butter.

    Pour into the loaf pan and bake for approx 50 minutes.

    Cool on a wire rack.

    Can be frozen.
