    200g Butter, softened
    3/4 cup Caster Sugar
    2 Lemons, rind finely grated & juiced
    3 Eggs
    1 1/4 cups SR Flour
    1/2 cup Plain Flour
    1/2 cup White Sugar

    Preheat the oven to 170C. Grease & line 10cm x 21cm x 7cm deep loaf pan, allowing a 3cm paper overhang on the long sides.

    Using an electric mixer, beat the butter, caster sugar & rind until pale & creamy. Add eggs, 1 at a time, beating well after each addition.

    Sift the flours together over the butter mixture. Stir with a wooden spoon until combined. Spread into the pan & smooth the surface.

    Bake for 40 - 45 minutes or until an inserted skewer comes out clean.

    Stand in the pan for 10 minutes. Lift onto a wire rack. While cake is still warm, combine the white sugar & 1/3 cup of lemon juice. Pour over the cake.

    Serves 8
