    Zucchini Crepes with Smoked Trout

    List of Ingredients




    3/4 cup plain flour
    2 tbs plain flour (spare)
    Sea salt
    2 eggs, lightly beaten
    1 1/4 cups Milk
    1/4 cup single (or pouring) cream
    6 medium Zucchinis
    20g Butter, melted
    360g smoked trout fillet

    Topping
    3/4 Mascarpone
    1 tbs chopped dill
    1 tbs lemon juice

    Recipe



    Combine the flour & salt in a bowl. Add the eggs, milk & cream, whisking until smooth. Set aside for 30 minutes.
    Using a vegetable peeler, peel the zucchinis into long ribbons.
    Heat a frying pan over medium heat & brush with the melted butter. Add a few strips of zucchini & cook until soft. Pour 2 tbs of crepe mixture over the zucchini & cook for 30 - 60 secs each side or until golden. Remove & keep warm. Repeat with the remaining mixture.

    To make the topping, combine the cheese, dill & lemon juice. To serve, top each crepe with some of the mascarpone topping & flaked trout.

    Serves 4
