    500g fresh Asparagus, woody bottoms snapped off
    1 tablespoon Extra Virgin Olive Oil
    3 large Eggs
    1/4 cup grated Parmesan Cheese
    handful Thyme sprigs

    Recipe



    Preheat grill. Place asparagus in a large pot of salted, boiling water and cook for 3 minutes, or until asparagus is bright green and crisp-tender. Drain, then run under cold water and drain again. Cut into 5cm pieces. Heat oil in a 22cm non-stick frypan over a moderate heat. Add asparagus and saute for 1 minute.

    Beat eggs in a bowl, season. Stir in parmesan, then pour mixture into pan over asparagus. Sprinkle with thyme. Cook until base is golden, then place under preheated grill and cook about 3 minutes, or until top is golden and set. Slide onto a platter and serve warm or at room temperature.

    Serves 4
