    Great meal to make up for a toddler. Just reduce the recipe by using 1/4 of the amounts specified.

    List of Ingredients




    2 packets (180g) 2 minute Noodles
    4 Eggs, lightly beaten
    4 Tbspns Milk
    4 Tbspns grated Cheddar Cheese
    3/4 cup frozen Peas & Corn, thawed
    2 Tbspns Butter
    3/4 cup shredded Barbeque Chicken

    Recipe



    Cook noodles in a saucepan of boiling water for 2 minutes, drain.

    Whisk egg, milk, cheese, peas & corn in a bowl. Add noodles.

    Melt butter in a non-stick frying pan over medium heat. Add egg mixture. Top with chicken. Cook for 3 - 5 minutes or until just set. Lift edge of omelette during cooking to allow any unset egg to run underneath.

    Fold omelette in half. Slide out of pan onto a plate. Cut into halves & share witha friend. Can be enjoyed hot or cold. Serve up with a salad.

    Nutrition per serve: 894kj; 13.3g fat; 6.9g sat fat; 10.1g protein; 12.6g carbs; 2.4g fibre; 124g cholesterol.
