Chorizo Sausage Tortilla

Deliciously filling main meal, a type of Spanish omelette, that is also great to freeze for those nights that you just don't want to cook! Just double the recipe, half now, half next week!

List of Ingredients
4 Tablespoons Olive Oil
2 Onions, Sliced
6 Eggs
450g (1lb) Potatoes, diced, boiled for a few minutes
175g (6oz) Chorizo Sausage, diced into 12mm (1/2in) pieces
2 Tablespoons Parsley, finely chopped, extra for a garnish
Salt & Pepper to taste
You could substitute the Chorizo sausage for salami, or something similar.
Replace some of the potato with zucchini or a favourite vegetable.
Recipe
You will need a heavey frying pan with a lid for this recipe. Heat the oil over medium heat & fry the onions for approx 3 mins, stirring occasionally. Reduce heat to low and add the potato.
Cover & cook for 15 - 20 mins or until the onions & potatoes are soft, stirring occasionally.
Stir in the sausage & cook for a few minutes or until the sausage is heated through. Meanwhile, beat the eggs together with the salt, pepper & parsley.
Pour the over the potato & sausage mixture. Cover & leave to cook on low heat for about 30 minutes or until the eggs have set. Invert the tortilla onto a warmed plate & cut into serving portions. Garnish with chopped parsley.
Enjoy!
Wonderful served with a fresh salad.
