Spaghetti in a Cream & Bacon Sauce

350g Spaghetti
1 tbs olive oil
1 onion, chopped
115g bacon, diced
1 garlic clove, chopped
3 eggs
300ml double cream
Salt & Pepper
50g parmesan cheese, grated
Basil to garnish
Recipe
Cook the spaghetti. Heat oil in a frying pan & fry the bacon & onion for 10 minutes, until softened. Stir in the garlic & cook for 2 minutes.
In a bowl, beat the eggs, and then stir in the cream & season with salt & pepper. Stir in the cheese. Add the cream mixture to the bacon & onion & cook over low heat for several minutes, stirring constantly, until heated through.
Drain the pasta & place in a large serving dish, Pour over the sauce & toss to coat. Garnish with basil.
