List of Ingredients
3 Tbspns Oil
1 Onion, chopped
1 Capsicum, diced
5 Tbspns Supreme Gravy Mix
2 Tbspns Barbecue Sauce
2 cups Water
400g can Diced Tomatoes
1 1/4 tsps Mexican Chilli Powder
2 x 400g cans Red Kidney Beans, rinsed & drained
12 Flour Tortillas

Heat oil in a large saucepan & add onion. Cook for 2 mins. Add the capsicum & garlic. Cook for 1 minute. Toss beef in 2 tbspns of gravy mix, add to the vegetables & cook for 1 minute.
Combine the remaining gravy mix, barbecue sauce, water, tomatoes & chilli powder, & pour over the beef mixture. Bring to the boil, stirring continuously. Reduce heat, cover & simmer for 30 minutes, stirring occasionally until beef in tender.
Add kidney beans & cook for a further 5 minutes until heated through. Meanwhile prepare tortillas according to directions on packet. Garnish beef with coriander & serve.
Serves 6.
Try sprinkling some grated cheese on the top for a different variation.
