Toddler's Chicken Nuggets w/Sweet Potato

1 small Chicken Breast Fillet, trimmed
1 Egg, beaten
1/2 cup Cornflake Crumbs
1 small (150g) Sweet Potato

Preheat oven to 200C. Line 2 baking trays with baking paper.
Cut chicken into bite-sized pieces. Place egg & cornflake crumbs in separate bowls. Dip chicken into egg, then crumbs, pressing crumbs on with fingertips. Place nuggets on 1 tray.
Peel potato & cut into 1cm thick slices. Using a 4cm star-shaped (or any other similar sized biscuit cutter), cut stars out of sweet potato slices. Place on remaining tray. Lightly spray nuggets & stars with oil. Place tray of stars on shelf in the lower part of the oven. Bake for 10 minutes.
Place nuggets on shelf above stars. Bake both for a further 10 - 15 minutes or until nuggets are tender & stars are soft. Serve with dipping sauce, such as chutney, BBQ or tomato sauce.
