List of Ingredients
4 large potatoes,
¾ cup frozen peas
20g butter
pinch salt
1 cup breadcrumbs
½ flour
2 eggs lightly whisked
1 cup peanut oil
Recipe
Place potatoes in a saucepan of cold water & bring to the boil. Boil uncovered for 20 minutes. Add the peas & cook a further 5 minutes. Drain. Set peas aside in a bowl.
Set potatoes aside for 5 minutes then peel & coarsely chop. Add potato to butter & peas, then season with salt.
Mash until almost smooth. Set aside for 10 minutes to cool.
Divide mixture in to 12 portions & shape into patties. Place breadcrumbs, eggs & flour into separate bowls. Dip 1 patty at a time into the flour; shake off excess, then the egg & breadcrumbs. Place on a plate.
Heat half the oil over high heat. Add half the patties & shallow fry for 3 minutes each side. Change the oil & repeat for the remaining patties.
