Recipe Introduction
A great way to serve up your vegetables. You can substitute some of the vegetable mix with some bacon for a different way to serve this dish.
List of Ingredients
2 sheets of Pastry
1 Tblspn Olive Oil
1 clove Garlic, crushed
1/2 cup finely chopped Onion
1/4 cup finely chopped Capsicum
1 cup cubed Sweet Potato
2 cups cubed Potato
1.5 cups cubed Pumpkin
1 Tblspn chopped Parsley
2 tspn Vegetable Stock powder or 2 cubes crumbled
200g Beans, blanced & chopped
Salt & Pepper to taste
Egg & milk mixed, for glazing (excess egg can be added to the filling)
Recipe
Heat the oil & cook the onion, capsicum, garlic & sweet potato for 5 minutes.
Boil the potato & pumkin until tender, then drain well.
Combine into the onion mixture. Add the stock, parsley,salt & pepper. Mix well then set aside & allow to cool.
Place a sheet of pastry onto a lined baking tray. Spread with the vegetable mixture leaving a 5cm border around the edges.
Layer the beans over the top of the mixture. Cover with a sheet of pastry. Fold in the edges & press with a fork to seal. Brush the pastry with the egg glaze.
Bake at 220c for 25 - 30 mins or until golden.
Serves 6.
