1 Tbspn Oil
1 kg chunky Mixed Frozen Vegies
2 Tbspns Curry Paste
300g can Chick Peas - undrained
400g can Diced Tomatoes
1/2 cup fresh Coriander Leaves, chopped
Recipe
Heat oil in a large saucepan, add frozen vegies and stir fry for 5 - 6 minutes.
Add curry paste, chick peas and tomatoes, cover and simmer for 5 - 6 minutes, stirring occasionally.
Serve curry in bowls garnished with coriander and serve with rice.
