    Twice Baked Potatoes

    List of Ingredients


    • 3 large baking potatoes
    • 1/2 cup margarine
    • 1/2 cup sour cream
    • 1/2 cup sliced scallions
    • 1/2 cup light cream
    • 1 teaspoon salt
    • pepper
    • paprika
    • 1 cup shredded cheddar cheese
    • 1 1/2 teaspoons vegetable oil (optional)


    Instructions


    1. Bake potatoes for 1 hour 20 minutes at 400 degrees.

    2. Allow to cool to touch, then cut in half length-wise. Scoop out pulp & place in large bowl.

    3. Saute scallions in 1/4 cup margarine 'til tender and add to pulp with the rest of the ingredients EXCEPT for cheese & paprika.

    4. Beat until smooth, fold in cheese.

    5. Stuff shells and place in 13x9" pan. Melt the remaining margarine, drizzle over potatoes. Sprinkle with paprika.

    6. Bake at 350 degrees for 20-30 minutes.
