Twice Baked Potatoes

List of Ingredients
- 3 large baking potatoes
- 1/2 cup margarine
- 1/2 cup sour cream
- 1/2 cup sliced scallions
- 1/2 cup light cream
- 1 teaspoon salt
- pepper
- paprika
- 1 cup shredded cheddar cheese
- 1 1/2 teaspoons vegetable oil (optional)
Instructions
- Bake potatoes for 1 hour 20 minutes at 400 degrees.
- Allow to cool to touch, then cut in half length-wise. Scoop out pulp & place in large bowl.
- Saute scallions in 1/4 cup margarine 'til tender and add to pulp with the rest of the ingredients EXCEPT for cheese & paprika.
- Beat until smooth, fold in cheese.
- Stuff shells and place in 13x9" pan. Melt the remaining margarine, drizzle over potatoes. Sprinkle with paprika.
- Bake at 350 degrees for 20-30 minutes.
