    Lemon is such a refreshing flavor. Great for summer time desserts and great for taking to pot lucks.


    List of Ingredients


    • 2 cups all-purpose flour
    • 1 cup (2 sticks butter) softened
    • 1/4 cup plus 1 tablespoon confectioner's sugar
    • 4 eggs
    • 2 cups granulated sugar
    • 1 tsp baking powder
    • 1/4 tsp salt
    • 2/3 cup freshly squeezed lemon juice


    Instructions


    1. Heat oven to 350 degrees
    2. Beat together flour, butter and the 1/2 cup confectioner's sugar in a small bowl with electric mixer until well belended.
    3. Press into bottome of 13 X 9 X 2 inch baking pan.
    4. Bake at 350 degrees for 25-30 minutes or until lightly golden.
    5. Beat eggs, granulated sugar, baking powder, salt and lemon juice in small bowl untill smooth.
    6. Pour over hot crust.
    7. Bake 15 minutes more or until bubbly and lightly browned. Cool completely in pan on wire rack.
    8. Dust lightly with remaining confectioner's sugar.
    9. Cut into diamonds or squares.
    10. Store in airtight container at room temperature.
