Lemon Diamond Squares

Recipe Introduction
Lemon is such a refreshing flavor. Great for summer time desserts and great for taking to pot lucks.
List of Ingredients
- 2 cups all-purpose flour
- 1 cup (2 sticks butter) softened
- 1/4 cup plus 1 tablespoon confectioner's sugar
- 4 eggs
- 2 cups granulated sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 2/3 cup freshly squeezed lemon juice
Instructions
- Heat oven to 350 degrees
- Beat together flour, butter and the 1/2 cup confectioner's sugar in a small bowl with electric mixer until well belended.
- Press into bottome of 13 X 9 X 2 inch baking pan.
- Bake at 350 degrees for 25-30 minutes or until lightly golden.
- Beat eggs, granulated sugar, baking powder, salt and lemon juice in small bowl untill smooth.
- Pour over hot crust.
- Bake 15 minutes more or until bubbly and lightly browned. Cool completely in pan on wire rack.
- Dust lightly with remaining confectioner's sugar.
- Cut into diamonds or squares.
- Store in airtight container at room temperature.
