    Mini Pecan Pies

    List of Ingredients




    Crust Mix:

    8 oz Cream Cheese
    1 1/3 Cup butter/margarine
    2 2/3 Cup Flour

    Filling:

    2 Cups packed brown sugar
    3 Tbls Softened butter or margarine
    3 Eggs
    1 Tsp Vanilla Extract
    1 1/2 Cup Finely chopped pecans, divided

    Recipe



    For pastry, blend cream cheese and butter until smooth;stir in flour. Chill about 1 hour. Shape into 1 inch balls. Place in ungreased miniture muffin tins; press the dough against bottom and sides to form a shell. Set aside. In bowl, beat brown sugar, butter and egg until combined. Add vanilla, and have the pecans; spoon in to pastry. Top with remaining pecans. Bake at 375 degrees for 20 minutes, or until filling is set and pastry is light golden brown. cool and remove from pans. Makes about 6 dozen.
