    Kalua Pork

    Source of Recipe

    William "Tricky"Napeahi

    Recipe Introduction

My friend gave me this very good recipe for his Kalua Pork. Even though he didn't share many of his traditional recipes, he did share this one and to the best of my memory this is how he said it could be done without the big hole in the ground. He says it will serve about 6-8 people, but it's so good and unless you have lots of other food, I don't see how.

    List of Ingredients

4 pound pork shoulder or butt roast
2 tablespoons sea or kosher salt
    2 tablespoons liquid smoke
    1 tablespoon grated ginger
    2 garlic cloves, crushed
    2 tablespoons soy sauce

    Recipe

    Preheat oven to 350 degrees.
Rub meat with salt, liquid smoke, ginger, garlic and soy sauce.

Wrap securely in foil. Roast about 3 hours until very tender.

Remove from oven;let stand about 15 minutes. Shred, removing slabs of fat, and serve.
