    Tequila Lime Chicken

    List of Ingredients


    • 1/2 cup freshly squeezed lime juice (3-4)
    • 1/4 tequila, Gold is best
    • 1/4 cup orange juice, freshly squeesed works best
    • 1 1/2 tsp chili powder
    • 1 1/2 tsp minced garlic
    • 1-2 minced and seeded jalapeno pepper
    • 1 tsp sea salt
    • 1/2 freshly cracked pepper
    • 6 bonless breast halves
    • 1 tsp salt
    • 1 tsp freshly cracked pepper


    Instructions


    1. Mix together all ingredients for marinade, I use a large freezer ziplock bag.
    2. Add chicken;remove air, seal bag and turn from time to time to coat chicken.
    3. Refrigerate 12 hours or overnight.
    4. Spray grill with non-stick spray, place chicken on grill skin side down. Sprinkle with salt and pepper.
    5. Discard marinade.
    6. Grill skin side down 5 minutes or until browned. Turn;cook 10 minutes or until cooked through.
    7. Remove to platter, cover with foil and let rest for 5 minutes.
    8. Serve hot or at room temperature.


    Final Comments


    Great for Tequila Lime Chicken Salad also.
