COLD NOODLE SALAD ORIENTAL STYLE

I came up with this recipe after eating at a friends house and she would not share the recipe with me. Now many years later this recipe is every where but this one is the one I still love the best.
List of Ingredients
½ cup creamy peanut butter
¼ -½ cup hot water
1 tbls vinegar
1 tbls soy sauce
1 tbls olive oil
2 cloves crushed garlic
1 tsp sugar
¼ tsp crushed red pepper
¼ tsp salt
12 oz Chinese egg noodles
3-4 green onions finely chopped
1 cucumber, seeded, drained and sliced thin all green removed
2-3 sliced barbecued Chinese pork
Recipe
In bowl, gently stir hot water into peanut butter until well blended. Add vinegar, soy sauce, garlic, sugar, crushed red pepper and salt and stir until mixed. Boil noodles according to directions. Rinse and place in cold water. Peel cucumber , then slice off the white membrane of cucumber and thinly slice, place on paper towel to dry. Finely dice green onions, and thinly slice strips of barbecued pork. Drain noodles, and put in med-large serving bowl, toss with sauce mix, then top with onions, cucumber and pork. Drizzle with a little hot pepper oil. Serves 4.
