This recipe looked so good on TV I tried to copy and it turned out very well. Tastes great.
List of Ingredients
- 3 Tbsp canola oil
- 1 medium onion, halved and sliced thinly
- 1 clove of garlic, chopped fine
- 1 Tbsp grated fresh ginger
- 1 tsp salt
- 2 cups basmati rice, rinsed in cold water and drained
- 1 14oz can unsweetened coconut milk (not cream of coconut)
- 1/4 tsp freshly grownd pepper
- 1 thinly sliced scallions (5 or so) or green onions
- 1/2 cup unsweetened dried coconut
- 1/2 cup dry-roasted cashews coarsely chopped
Instructions
- Heat oil in a large, heavy saucepan over medium-high heat. Add onion,garlic and ginger; sprinkle with about 1/4 tsp salt and cook, stirring, about 7-8 minutes or until soft (do not brown). add rice and cook, stiring to coat rice for 2 minutes.
- Add coconut milk, 2 1/4 cups water and 1/4 tsp each salt and pepper; bring to a boil. Reduce heat to very low, tighly cover and cook 14-20 minutes or until rice is soft and all liquid is absorbed.
- Transfer to a large serving bowl and fold in scallions and coconut, fluffing rice and breaking up any clumps.
- Season with sal and pepper to taste.
- Garnish with cashews; serve hot or at room temperature.
