Recipe Introduction
My friend grew the rosemary for this recipe, so it is somewhat special to me.
Goes well with Pork Roast and use the drippings from the pork roast.
List of Ingredients
Pan Roasted Potatoes
3 lbs. new potatoes
4 Tbsp. (½ stick) unsalted butter
¼ cup extra-virgin olive oil
1 Tbsp. chopped fresh rosemary
1 Tbsp. chopped fresh thyme
Dry Rub (recipe below)
Dry Rub:
¾ tsp. garlic salt
¾ tsp. sugar
½ tsp. onion salt
½ tsp. paprika
½ tsp. black pepper
¼ tsp. celery salt
Pinch of curry powder
Recipe
Put potatoes in large baking pan in single layer.
In a small bowl, combine Dry Rub ingredients.
In small saucepan, melt butter; then add olive oil.
Drizzle butter and olive oil mixture over potatoes; sprinkle rosemary, thyme and Dry Rub evenly over potatoes, and toss together
Serves 4-5
