Cream of Potato Soup

Recipe Introduction
I could never find a potato soup I liked that was home-made. I started to play around with a bit of this and a lil' of that and BAM! Here it is! It's not healthy, by any means but it sure is a treat!
List of Ingredients
- 4 to 6 large potatoes
- 1 large can chicken broth
- 1 box potato flakes
- 1 stick of butter
- 1 small container of Half & Half
- season salt & pepper to season
- chives
- bacon bits
- shredded cheddar and mozzarella cheese
Instructions
- Cut potatoes into cubes. Do NOT peel. Put in large pot with chicken broth. Bring to a boil.
- When potatoes are tender gently mash into broth leaving small chunks. Reduce heat to simmer.
- Add potato flakes to thicken.(NOTE:use as much or as little as you want. Whatever thickness you desire.)
- Add butter and some of the mozzarella cheese (as little or as much as you want.)
- Add Half & Half to make creamy. DO NOT let boil.
- Add season salt & pepper to taste.
- Before serving, add chopped chives, bacon bits and cheddar cheese to individual servings.
