Easy Jambalaya

Recipe Introduction
My father-in-law LOVES this recipe. You can cut back on the spices to make it as little or as hot as you'd like.
List of Ingredients
- 2 cups white rice
- 1 tablespoon butter
- 3/4lb andouille sausage; diced
- 2 ribs celery; chopped
- 1 tablespoon olive oil
- 1lb boneless skinless chicken breast
- 1 medium onion; chopped
- 1 green bell pepper; chopped
- 3 tablespoons flour
- 1 can diced tomatoes
- 1lb medium shrimp
- 1 bay leaf
- 2 tablespoons hot sauce
- 1 teaspoon chili powder
- 1 teaspoon worcestershire sauce
- 1 teaspoon cumin
- 1 teaspoon poultry seasoning
- 1 can (14oz) chicken broth
- Course salt and pepper
Instructions
- Cook rice to pkg directions.
- Place large skillet over medium heat. Add oil and butter.
- Cube chicken and place in hot oil. Brown for 3 minutes, add sausage and cook about 2 minutes more.
- Add onion, celery, pepper, bay leaf and hot sauce.
- Saute' vegetables 5 minutes, sprinkle with flour and cook 1 to 2 minutes.
- Stir in tomatoes and broth. Season with cumin, chili powder, poultry seasoning and worcestershire sauce.
- Bring to boil and add shrimp. Simmer for 5 minutes.
- Ladle over rice.
Final Comments
Always good with crusty bread.
