This is a wonderful and moist apple cake and easy to prepare
List of Ingredients
3 cups all-purpose flour
2 tsps baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp. cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
2-1/4 cups firmly packed brown sugar
1 cup margarine
2 eggs
1 cup brewed coffee (cold)
1 cup raisins
1 cup chopped walnuts
1 medium tart cooking apple peeled, cored, coarsely chopped
*Topping* as follows
3/4 cup sugar
1/4 cup firmly packed brown sugar
1/2 tsp cinnamon
3/4 cup chopped nuts
Instructions
Heat oven to 350. In medium bowl mix flour, soda, baking powder, salt, and the three spices. Set aside. In a large mixer bowl, mix the brown sugar and margarine. Beat at medium speed, until light and fluffy about three minutes. Continue beating, adding eggs and then add flour with the coffee and mix good. By hand, stir in the raisins, walnuts and apples. Spread in a greased 13x9 pan. In a medium bowl mix all the toppings ingredients. sprinkle over the batter and gently press into the batter. Bake for 40 to 50 minutes or until a toothpick inserted comes out clean
