    These cakes make a wonderful breakfast with crisp bacon and tomato slices.

    List of Ingredients




    3 ears fresh sweet corn (*see note below)
    1 egg
    1 C. thick buttermilk
    1/2 tsp. baking soda
    1/2 tsp. salt
    1/2 tsp. sugar
    1/2 C. flour
    2 tsp. cooking oil

    Recipe




    To cut kernals from corn, hold the ear upright in a shallow bowl and cut downward with a sharp knife, cutting off only the tip of each kernel. Then, using the back of the knife, scrape downward until you have removed all the milk from each kernel.

    To this corn mixture add the whole egg, buttermilk, and sifted dry ingredients, beating after each addition. Stir in oil.

    Drop by spoonfuls onto a very hot, well oiled iron skillet. 
    Turn when brown and eat while piping hot.

    Serves 4.
