Easy and so good! Serves 8
List of Ingredients
4 to 5 lg. sweet potatoes
1 stick butter or margarine
1 1/2 c. brown sugar
2 tbsp. waterRecipe
Peel potatoes, slice in half lengthwise and boil for 15 minutes,
fork tender but not well done.
Drain. In a large skillet melt
butter on medium heat. Add brown sugar and stir until butter and
sugar are well combined. Stir in water, bring to a boil on medium
heat and cook approximately 5 minutes. With mixture at a continuous
boil add potatoes, turning occasionally to coat both sides.
Continue cooking until syrup thickens and potatoes are coated well.
(If mixture is slow to thicken, increase heat but watch carefully to
prevent burning.)
