    Buckwheat Pancakes

    I love Buckwheat cakes but the mixes and the ones in most restaurants are dreadful so I came up with my own version. They are so light and fluffy they almost float away.


    List of Ingredients


    • 1 cup buttermilk
    • 1 egg
    • 1 tablespoon vegetable oil or melted butter
    • 1 tablespoon honey (or molasses or brown sugar)
    • 1/3 cup buckwheat flour
    • 1/2 cup all-purpose flour
    • 2 tablespoons cornmeal
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt


    Instructions



    1. Blend egg, buttermilk, oil and honey. Mix together flours, cornmeal, baking soda and salt. Blend into liquid ingredients and fat. Be careful not to over-mix. Cook on 350ºF griddle till well browned on both sides.

    Final Comments


    Really good spread with apple or pear butter instead of butter and syrup.
