1 cup all-purpose flour
1 cup rolled oats
1 cup walnuts -- chopped
1 cup sugar
1/4 teaspoon salt
1 teaspoon baking soda
2 tablespoons boiling water
1 stick unsalted butter
3 tablespoons Lyle's golden syrup
Preheat oven to 350ºF.
In a bowl stir together flour, oats,walnuts, coconut, sugar, and salt.
In a small bowl stir baking soda into boiling water.
In a small saucepan melt butter with syrup over moderatly low heat. Remove pan from heat and stir in baking soda mixture. Stir butter mixture into flour mixture combing well.
Form rounded tablespoons of the batter into balls and arrange on baking sheet. Using palm of hand, press balls into disks about 2 inches in diameter and bake in the middle of the oven until edges are golden, about 14 minutes. Let cookies cool on baking sheet.

I have substituted half white Karo and 1/2 molasses
for the Golden Syrup. But it can be purchased at cost Plus Imports in Californa.
2 teapoons powdered ginger is a nice addition.
