    Mexican Flan

    Our family loves flan. This is a rather dense version. This is seldom found like this in Mexico nowadays because most restaurants use the mix.


    List of Ingredients


    • 1/2 cup sugar
    • 2 cups milk or (even better) 1/2 and 1/2
    • 4 eggs
    • 2/3 cup sugar
    • 1 teaspoon vanilla
    • pinch salt


    Instructions


    1. Caramelize sugar and put into bottoms of 6 custard cups.
      Scald milk. Meanwhile, mix eggs, sugar, salt and vanilla. Stir scalded milk into egg mixture. Strain into custard cups. Bake in water bath at 350°F. for about 30 minutes. Watch closely during last of baking so it doesn't over cook and get watery. Makes 6.
