4 large chicken breast halves
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons olive oil
2 tablespoons butter
3 tablespoons fresh chives -- chopped
lemon juice -- from 1/2 lemon
2 tablespoons brandy
3 tablespoons chopped parsley
2 teaspoons dijon mustard
1/4 cup chicken broth
1. Place chicken breast halves between 2 pieces of waxed paper or plastic wrap. Pound slightly to flatten. sprinkle with salt and pepper.
2. Heat 1 tablespoon each olive oil and butter in a large skillet.
3. Cook chicken over high heat for 4 minutes on each side. Do not cook longer or they will be dry. Tranfer to serving platter.
4. Add chives, lemon juice, brandy, parsley and salt to pan. Cook stirring 15 seconds.
5. Whisk in broth. Stir until sauce is smooth. Whisk in remaining butter and olive oil.
6. Pour sauce over chicken serve immediately.

NOTES : Green onions may be substituted if no chives are available.
Good servd with noodles in tomato sauce, steamed broccoli and a fresh salad.
