Corn Chowder
List of Ingredients
- 2 cups chicken broth
- 1 medium onion, minced
- 1/4 cup chopped celery
- 3 small potatoes, diced (about 2 cups)
- 1 teaspoon fresh thyme
- 1 can creamed corn
- 2 cups milk or half and half
- 2 ounces diced pimento
- 2 tablespoons instant flour (optional)
- 2 tablespoons minced parsley
- Salt and white pepper to taste
Instructions
- Heat broth and add onion, celery and potatoes. Cook until potatoes are tender. Stir in corn, milk, pimento and thyme. Bring to boil. Mix flour with a little water and add to soup, stirring and simmer until thickened. Season with salt and pepper.
- Serves 6
