    Corn Chowder


    List of Ingredients


    • 2 cups chicken broth
    • 1 medium onion, minced
    • 1/4 cup chopped celery
    • 3 small potatoes, diced (about 2 cups)
    • 1 teaspoon fresh thyme
    • 1 can creamed corn
    • 2 cups milk or half and half
    • 2 ounces diced pimento
    • 2 tablespoons instant flour (optional)
    • 2 tablespoons minced parsley
    • Salt and white pepper to taste


    Instructions


    1. Heat broth and add onion, celery and potatoes. Cook until potatoes are tender. Stir in corn, milk, pimento and thyme. Bring to boil. Mix flour with a little water and add to soup, stirring and simmer until thickened. Season with salt and pepper.
    2. Serves 6

    I created this in order to use up a can of creamed corn.
