Low-Fat Carrot Cake
List of Ingredients
2 cup Flour, all purpose
1 tsp Baking powder
1/2 tsp Salt
1 8 oz can crushed pineapple
1 tsp Vanilla
3 large egg whites
1 cup Sugar
1/2 cup honey
1 ts Baking soda
1/4 ts Nutmeg
2 TBsp Vegetable oil
1 TBsp Applesauce
3 cup Carrots, shredded
1 pn Cloves

Preparation: Preheat oven to 350F. Line 13 x 9 in. baking pan with tin foil and spray with PAM cooking spray.
Mix moist ingredients (except egg whites) and sugars in a large bowl until smooth. Beat in dry ingredients until just combined. Stir in carrots.
Beat egg whites in small mixer bowl till they form stiff peaks. Gently fold egg whites into cake mixture using a spatula.
Pour batter into pan. Bake 40 min. or until toothpick comes out clean.
Cool in pan on wire rack. Invert cake onto wax paper; remove pan and foil.
