    Tomatillo or Green Tomato Salsa

    List of Ingredients




    5 cups tomatillos or green tomatoes, chopped
    1 cup long green chilies, seeded and chopped
    1/2 cup jalapeno peppers, seeded and chopped
    2 cups onions, chopped
    1/4 cup bottled lime juice
    6 cloves garlic, minced
    1 tbsp ground cumin
    2 tbsp cliantro, minced
    1 tbsp salt
    1 tsp red pepper

    Recipe



    Combine all ingredients in a large saucepan. Stir frequently over high heat until the mixture begins to boil. Then reduce heat and boil gently for 20 minutes, stirring occasionally. Ladle hot salsa into hot pint jars leaving 1/2 inch headspace. Wipe rims, adjust lids. Process 20 minutes in a boiling water bath canner. ( use altitude adjustments)
