    List of Ingredients




    5 cups peeled, cored and chopped tomatoes (about 3 lbs)
    5 cups chopped onion (about 1 1/2 lb)
    1 medium red pepper, seeded and chopped
    1 medium yellow pepper, seeded and chopped
    2 jalapeño peppers, seeded and chopped
    2 tbls minced cilantro
    2 cloves garlic, minced
    1 tsp salt
    3/4 cup vinegar (5 % acidity)
    2 drops hot pepper sauce

    Recipe



    Prepare canning jars and lids
    Combine all ingredients in a large saucepot. Bring
    mixture to a boil; reduce heat and simmer 10 minutes.
    Carefully ladle hot salsa into hot jars, leaving
    1/4-inch headspace. Wipe rim and threads of jar with
    a clean damp cloth. Place lid on jar with sealing
    compound next to glass. Screw band down evenly and
    firmly. Do not use excessive force.
    Process 15 minutes in a boiling-water canner.
    Makes about 3 pints.
