CELEBRATION RICE PUDDING

*the orig recipe didn't say how much vanilla, but I
used 1 t.
List of Ingredients
1 C. rice
1 1/2 qt.. milk (7 cups)
1/2 C. sugar
2 eggs
1/2 pt. heavy cream
1 t vanilla*
1/2 C. raisins (optional)
cinnamon
Recipe
Add 6 cups of milk, sugar and rice to a heavy pot and
bring to a boil then simmer 35 minutes. Loosely cover
and stir occasionally. Beat eggs with other cup of
milk and vanilla. Add to rice and bring to a boil.
Then add heavy cream and bring to a boil. Add raisins.
Turn off. Place in pretty serving dish or individual
serving dishes and sprinkle with cinnamon.
