Barley Casserole
When cooked in the original form, this is a heart-healthy meal.
List of Ingredients
2 - 4 T. butter
1 1/3 C. barley
1 ¼ C. (4 oz) sliced fresh mushrooms
¾ tsp. Salt
1 1/3 C. sliced carrots
2 C. diced raw chicken
1 large onion, minced
4 C. chicken broth or bouillion
¼ tsp. Pepper
Recipe
Saute butter, chicken, barley, onion, and mushrooms until lightly browned. Add remaining ingredients. Bring to boil. Reduce heat to simmer. Cover and cook until moisture is absorbed, about 45 minutes.
Variations: Substitute leftover roast or stew meat for the chicken, and beef broth for the chicken broth. Substitute browned sausage for the chicken, and beef broth for the chicken broth. Canned mushrooms and canned chicken may be substituted for the raw chicken and fresh mushrooms.
