    Lindsay's Fast Fajitas

    List of Ingredients

    8 ounces sirloin steak -- sliced in thin strips -- OR boneless inside round steak
    1/2 cup fresh cilantro -- chopped
    1 tablespoon fresh lime juice -- or lemon juice
    1 teaspoon chili powder
    1 teaspoon ground cumin
    1/2 teaspoon pepper
    1 teaspoon vegetable oil
    1 onion -- sliced
    2 cloves garlic -- minced
    1 red and green bell pepper -- thinly sliced
    4 flour tortillas -- (10-inch-each)
    1/2 cup light sour cream -- (5%)
    --OR plain yogurt (2%)
    1 teaspoon jalapeno pepper -- minced
    --OR 1/4 teaspoon (1mL) hot pepper sauce


    Recipe

    In bowl, toss together beef, 2 tbsp (25 mL) of the cilantro, lime juice,
    chili powder, cumin and half of the pepper, let stand for 10 minutes.

    In heavy nonstick skillet, heat oil over medium-high heat; stir fry beef
    for
    3 minutes or until browned. Transfer to plate.

    Add onion and garlic to skillet; stir-fry for 2 minutes, adding 1 tbsp
    (15mL) water if necessary to prevent scorching. Add red and green peppers,
    2
    tbsp (25 mL) of the remaining cilantro and remaining pepper; sprinkle with
    salt to taste. Stir-fry for 3 to 5 minutes or until tender. Stir in beef
    and
    corn until heated through.

    Meanwhile, wrap tortillas in foil; warm in 350F (180C) oven for 5 minutes.

    Mix yogurt, remaining cilantro and jalapeno pepper or pepper sauce; spread
    evenly over tortillas. Spoon beef mixture evenly down centre of each; roll
    up to enclose.

    NOTES : Serves 4
