1 tablespoon vegetable oil
1 pound sweet Italian sausage links
1 large green bell pepper -- cut in 1/2" strips
1 large red bell pepper -- cut in 1/2" strips
3 cups potatoes -- diced
1 package onion soup mix
1 1/2 cups waterRecipe
In a large skillet heat oil over medium high heat and brown the sausage. Remove the sausage and reserve the drippings. Cut the sausage into 1-inch slices and set aside.
Add the peppers to the reserved drippings and cook, stirring frequently, 2 minutes. Add the potatoes and the onion soup mix blended with the water. Bring to a boil over high heat. Reduce heat to low and simmer, covered, 10 minutes. Return the sausage to the skillet and simmer, covered, 5 minutes or until the sausage is done and the potatoes are tender.
NOTES: serve this with cornbread and it makes a very good meal.
