Frog eye salad
List of Ingredients
1 c. sugar
1 1/2 tsp. salt
2 eggs, beaten
3 qts water
1 pkg. acini de pepe (16oz)(you can find this in the noodle section of the grocery store they look like little round noodles the size of peas)
2 (20oz each) cans of pineapple chunks, drained
1 (13oz) cool whip
1 c. cocnut
2 tbsp. flour
1 3/4 c. pineapple juice
1 tbsp lemon juice
1 tbsp. oil
3 (11 oz each) cans of mandarin oranges, drained
1 (20 oz) can crushed pineapple drained
1 c. miniature marshmallows
Recipe
Combine sugar, flour, and 1/2 tsp salt. Gradually stir in pineapple juice and eggs. Cook over moderate heat, stirring until thickened. Add lemon juice. Cool mixture to room temeperature.
Bring water, add remaining 2 tsp of salt and oil to boil. Add acini de pepe. cool until done. Drain, rinse, drain again and cool to room temperature.
Combine egg mixture and acini de pepe, Mix throughly refrigerate overnight in airtight container.
Add remaining ingredients, mix lightly but throughly. Refrigerate until chilled in aritight contaner
