Ranch Potato Salad
List of Ingredients
3 medium russet potatoes, peeled and cubed
1/4 cup low-fat mayonnaise
1/2 cup fat-free ranch salad dressing
3/4 cup diced celery
1/2 cup thawed frozen peas
1 tsp paprika
1/4 cup chopped scallions
Fresh ground pepper and salt to taste
Recipe
1. Boil the potatoes for 10 to 15 minutes until done. Drain and set aside.
2. Combine the remaining ingredients and toss well with the potatoes.
3. Refrigerate for 1 hour before serving.
