Terrific Texas Chili Salad
List of Ingredients
1 Lb. ground beef
1 package chili seasoning
1/2 cup water
1 can (15 oz.) kidney beans (undrained)
1 can (14 oz.) diced tomatoes (undrained)
1/2 cup sour cream
3 Tbls. mayonnaise
1 fresh tomato (diced)
1/4 cup chopped fresh cilantro
1/2 tsp. pepper
1 head lettuce
1 red pepper (sliced)
1/4 cup sliced green onions
1-1/2 cups shredded Cheddar cheese
1/4 cup sliced olives
Recipe
In a large skillet, brown ground beef; drain fat. Stir in
chili seasoning, water, kidney beans and canned tomatoes;
mix well. Bring to a boil; reduce heat and simmer, uncovered,
10 minutes. For dressing, combine sour cream, mayonnaise,
fresh tomato, cilantro and pepper in a blender; blend well.
Refrigerate until chilled. On 6 individual plates, layer
lettuce, chili meat, red pepper, green onions, Cheddar cheese
and olives. Drizzle with chilled dressing. Makes 6 servings.
