Potato Soup
List of Ingredients
6 cups peeled and diced red potatoes
2 cups water
1 cup diced celery
1 cup grated carrots
1/2 cup finely chopped onions
2 teaspoons dried parsley flakes
2 chicken bouillion cubes
1 teaspoon salt
1/8 teaspoon black pepper
3 cups milk, divided
1/4 cup all-purpose flour
3/4 pound grated cheese
Recipe
Cook first 9 ingredients with the water until tender. Mix 1 cup of the milk with the flour, until the flour mixture is smooth. Add this along with the remaining 2 cups of milk to the potatoes. Then add the grated cheese. Heat until the cheese melts. This is a very good soup.
To reduce the fat content use skim milk and reduced fat cheese. Or: you can reduce the amount of cheese. This is made in our school cafeteria and the students love it.
