Chicken Paprika for Two
List of Ingredients
2 chicken breasts, boned & skinned, rinsed
1 large onion (the size of a softball), chopped
2 Tablespoons butter
1 heaping tablespoon sweet or rose paprika (not the hot kind!)
1 cup sour cream
1 tablespoon flour
Cooked rice or pasta for serving
Recipe
Melt the butter over medium heat and saute the onion until lightly browned. Stir in the paprika and immediately lay the chicken on top of the onions with whatever water clings to it. Cover the skillet tightly and reduce the heat to low. Cook for 1/2 hour to 45 minutes (time will vary depending upon thickness of chicken breast and stove settings) or until chicken is cooked through. Remove chicken and chop up; return to skillet and stir all together. Mix flour into sour cream and add, stirring thoroughly. Raise heat to medium and bring to a boil; remove from heat and serve over rice or noodles.
