    2 lbs frozen southern style hashbrowns (the cubed ones)
    1 tsp. salt
    1/2 tsp. pepper
    1/2 cup margarine, melted
    1 pint sour cream
    2 c shredded cheese
    1 can cream of chicken soup
    Topping:
    1/2 c margarine
    1 sleeve ritz crackers

    Recipe



    Mix soup, margarine, salt, pepper and sour cream. Mix into potatoes and cheese. Pour into a 9 x 13 casserole dish that has been sprayed with non-stick spray. Melt the remaining 1/2 cup butter. Add crushed crackers until butter is taken up. Pour topping evenly over potato mixture. Bake at 350 degrees until topping is browned and casserole is bubbly.
