    Linda's Pepper Nacho Boats

    2 med. green peppers
    2 med. sweet red pepper
    1 med. sweet yellow pepper
    5 med. plum tomatoes, seeded, and chopped
    1 lg. onion, finely chopped
    1 lb. hamburger, lean
    1 pkt. taco seasoning mix and 1/2 c. water
    1 c. rice, cooked
    1 c. Monterey Jack cheese, shredded
    1 c. Sharp Cheddar cheese, shredded

    Recipe



    Cut peppers down the middle in 1/2, and then cut each half in 1/2.

    Cut each piece in 1/2 horizontally, making 8 pieces, per pepper. Set aside.

    In a lightly greased skillet, cook the tomatoes, and onion, over med. heat for 3 mins., or until onion is opague, stirring occasionally.

    Add beef, and cook until meat is cooked through. Remove from the heat. Drain any grease.

    Add seasoning pkt. and water, and mix well. Cook until water
    evaporates. Take off stove.

    Add rice, and Monterey Jack cheese. Stirring well.

    Spoon a heaping tablespoon onto each pepper triangle.

    Place on greased baking sheets.

    Sprinkle each pepper piece with Cheddar cheese.

    Put the pan under the broiler, and broil 6-8" from the heat for 3-4 mins., or until cheese is bubbly, and mixture is heated through.

    Note:
    These appetizers can be assembled ahead of time. Place on baking sheets, cover, and refrigerate for up to 8 hrs. before broiling.

    Makes 40 pieces
