    Sue's Fiery Jalapeno Cheese Spread

    2 c. (8 oz.) shredded sharp Cheddar cheese
    16 oz. cream cheese, softened
    1 7 1/2 oz. can jalapeno relish*, recipe below
    1-1 1/2 tsp. ground cumin
    3/4 tsp. garlic powder

    Recipe



    Position knife blade in food processor bowl. Add all ingredients. Top with cover.

    Process 1 1/2 mins. or until smooth, scraping sides of bowl occasionally.

    Serve with assorted crackers.

    Makes 2 1/4 cups


    *Sue's Jalapeno Relish

    1 T. olive oil
    2 med. onions, finely diced
    1 red bell pepper, finely diced
    4 jalapeno peppers, seeded and diced finely
    1 tsp. sugar
    2 tsp. balsamic or red wine vinegar (I use balsamic)
    salt
    pepper
    1/2-1 tsp. capers (optional-sometimes I put them in,
    sometimes I leave them out)

    Heat the oil in a lg. skillet over med-high heat. Add the
    onions and saute until tender, and beginning to brown, about 10 mins.

    Stir in the peppers and cook 10 more mins., stirring often.

    Mix in the sugar, vinegar, salt, and pepper. Reduce heat to med., cover the pan, and cook until the mix is very soft and the juices are somewhat caramelized, not watery, about 20 more mins. Stir occasionally. (You can let this cook a little longer, and get even more caramelized, if you like, but take care not to burn.)

    Scrape the mixture into a bowl, then stir in the capers (if using).

    Let cool completely, and chill, until ready to serve.

    Bring the relish back to room temperature before serving.
